Butterflying a leg of lamb means to open, flatten and de-bone the leg to allow it to cook faster. Because of the uneven thickness of the meat it is perfect for barbecuing or grilling. The thinner areas of this cut tend to be more textural and the thicker parts are more tender and succulent, something to suit everyone.
